Lithuanian Pink Soup

šaltibarščiai, or Pink Soup, is a Lithuanian speciality made from beetroot and kefir (fermented milk). It's a summer delicacy, eaten cold. There is even a Pink Soup Festival in the capital, Vilnius, every summer!
